Alice Waters likes my leaves. Farmcore finds me too hard to deal with (you must blanche and strip my leaves before you start actually cooking and flavoring). i taste artichoke-like (with more bitterness?). At the edibleoffice, my leaves are composted to add green matter and nitrogen, and I reach elegantly 10' tall, exploding my 'choke into a huge purple flower.
